Deluxe Apple Crisp

Every Fall I make a mean Deluxe Apple Crisp and the recipe is somewhere up in my noggin’ — taken from different recipes that my mom made, one my mother in law made, and another I used years ago. A few years ago I came up with my own version and it has been my favorite. I made it for a best friend once and she asked me to share the recipe with her, so this is for you Heather.

It isn’t Fall yet. But I want it to be, besides I had a big bowl of yummy apples begging all week to be eaten. So when I walked in the kitchen this morning I looked over at them and could not resist.

Typically I will make this in 9X9, other times in a pie pan, but when I want to do something really fun I will bake little individual servings in my stone bakeware dishes like these:Β Libbey 6-Piece Just Baking Ceramic Oval Baker Set, White

First I start with an easy pat-in crust. No rolling needed here:

1 1/3 cups all-purpose flour

1/3 cup vegetable oil

1/2 teaspoon salt

2 tablespoons cold water

Mix all together {in order} until a pie crust consistency.

Pat in the bottom of a the pan(s) of your choice.

Set aside.

 

Then I move on to preparing the apples. A great way to easily do this is to use an apple-corer-peeler like this:Β Precision Kitchenware – Stainless Steel Apple Peeler Corer and Slicer – Luxury Black Edition.Β I love mine.

6-8 medium size apples of choice {I use granny smith because I like it tart}

Peel, core, and cut.

Lay inside of the unbaked crust.

Mix 1/8 cup flour and 1/8 cup sugar together with 1/2 tsp cinnamon.

Sprinkle mixture gently and evenly on top of apples in prepared crust.

Squirt with a the juice from 1/4 fresh lemon. More lemon if you used a red apple, less if you used a green one.

Set aside.

 

Now the BEST part, the oatmeal crumbs.

1 1/2 cup brown sugar

1 cup flour

1 teaspoon cinnamon

2/3 cup softened butter

1 cup oatmeal

Mix together until crumbly consistency.

Sprinkle on top of apples, packing it in so it all fits; the apples will shrink when baked.

 

Bake for 45 min at 350 degrees.

Cool for 5 min, share with a friend & ENJOY!
