Paleo Peanut Butter Cookie Recipe

You know when you are on a mission to become healthy and fit–especially after the New Year–and then the inevitable happens? You suddenly get a hankering for a little somethin’ somethin’ which will ultimately DESTROY your New Years Resolution. It is a scary place to be–because once your new ways have been disturbed it is harder to get back on track.

Believe me, I know this path ALL TOO WELL. haha {or actually sniff, sniff}.

Well, this happened to me today. I started craving a little somethin’ somethin’ sweet, soft, warm–actually A HOMEMADE COOKIE! So I thought instead of breaking my new Whole 30 lifestyle resolution I would whip up a little Paleo peanut butter cookie. There are plenty recipes to choose from, but I wanted to use the coconut sugar that I purchased last month and hadn’t opened yet.


I used  Adams Chunky Peanut Butter because that is what I had on hand. However, Creamy Peanut Butter
or even Almond Butter would work. I’m adding in peanut butter in my diet now and again {even though it is NOT Whole 30 approved}. This year I’ve been morphing into Paleo land a bit, because my body does not respond negatively when eating peanut butter. The batter of these cookies is a bit sticky and since they are gluten-free I didn’t use flour and a fork press. Because of this they don’t look like the traditional peanut butter cookie. I have to be honest, if you are used to eating sugar these aren’t going to taste like your mom’s recipe. But if you are on Whole 30 or Paleo you are going to FALL IN LOVE. This cookie recipe literally saved me on this cold, stuck in inside, snow day. I found this recipe on A Clean Bake you can see the original post HERE. Paleo Peanut Butter Cookies

{Original Recipe from A Clean Bake}

1 cup natural chunky peanut butter, smooth peanut butter, or Almond butter

2 organic/free range large eggs

1/2 cup organic coconut sugar

1/2 teaspoon baking powder

1/4 teaspoon vanilla extract {optional – not Whole 30 approved}

Pinch of Salt {optional}

Blend ingredients together

Bake 350 degrees for 10 minutes

{yield 14 cookies}
