Banana Pancakes: Paleo & Whole30

This morning I made the two delicious banana pancakes shown above for breakfast. All the while I could hear Jack Johnson’s Banana Pancakes song in my head and sang to it. Yes out loud. And YES I am sure my family was glad they were already gone for the day.

You may have guessed that I’m back on Whole 30 and you would be correct. But this time I am including recipes which the Hartwig’s term as “sex with your pants on”. If you haven’t read the book this means recipes which include ingredients in the rules but combined together feel like normal “not so good for you food” {aka food that is not allowed}.

But today I needed something other than an egg with a side bacon and this fit the bill. What I love about this recipe is that it is only two ingredients. Yep, you heard me correctly, TWO.

That would be ONE BANANA and ONE EGG.

First I would advise against using a slotted bowl. hahahaha.

Begin by warming up your non-stick, preferably ceramic pan. I like to cook these on medium heat and it is important to have the pan nice and warm when pouring in the batter.

While the pan is warming, a small mixing bowl smash one banana. In separate small bowl scramble one fresh egg. Combine smashed banana and scrambled egg and mix together with a fork and some love.

Pour batter into the warm pan and you will notice that the scrambled egg helps the batter rise nice and fluffy. If you don’t have a non-stick pan then you will want to coat your pan with olive oil spray for easy turning.

One banana and one egg will make two decent size pancakes.

Eat while nice and warm and enjoy the deliciousness!

Now to eat these two delicious Banana Pancakes, dipped in a bit of natures best, and then I may be ready to jump into the shower and do something amazing today. Let’s both hope and pray because another day laying in bed, watching my favorite movies while blogging may just happen…xoxoxoxo.
