Whole 30 Deluxe Taco Salad Recipe

I love eating Whole 30, even if I do not abide by the diet 100% of the time, I always feel better when I do. What I love about this recipe is that it is refreshing on a warm day and just plain ‘ol delicious. The fact that there isn’t any dressing added gives the ability to really taste all of the flavors inside the salad without being masked. As a matter of fact, more and more I am choosing not to add dressings to my veggies. I have come a long way, let me tell you. I used to be the Queen of Ranch.

I think that the key to this salad is that the homemade guacamole adds just the right amount of flavor and moisture. I always set my lean ground turkey taco meat in the bottom of my dish so the warmth doesn’t wilt the lettuce. Instead of adding cheese (which is not Whole30 approved) I love adding the healthy fat from a whole avocado. Occasionally I will add in some Whole Grain Tortilla chips–just a few.

Deluxe Taco Salad

4 ounces Browned and Cooked Lean Ground Turkey Meat {200 calories}

1 ounce Taco Seasoning {50 calories}

Mix together on medium heat, this is the first layer in the salad.

Whole Grain Tortilla Chips crushed to bite size {optional but not Whole 30 approved}

Add 1 large serving of chopped Romaine Lettuce {15 calories}

1/2 cup diced Tri Color Bell Peppers {40 calories}

2 scoops of diced Jalapeno {16 calories}

Guacamole from 1 large Avocado {103 calories}

Sliced Black Olives {25 calories}

To make Guacamole: 1 Large Avocado, 1/2 Tomato chopped, 1 green scallion chopped, salt to taste.

Calories: 450

Macros: Carbs 7 g ~ Fat 13.2 ~ Protein 50.5 g
