How to Make a Beautiful Pie

This recipe is an all-time family favorite. I bake this pie with lots of love every summer for my daughter’s birthday. It is so much fun to embellish it with fresh florals, attempting to make it almost as beautiful as she is. This project takes an entire afternoon, or about three hours, plus one hour to bake. It is best to let the pie set up over night and decorate the following morning when nice and cool.

I generally purchase three types of flowers plus a wax flower filler or berries. This year I used large pale pink roses, baby dark pink roses, hydrangeas in a white/green hue, and green berries. My rule of thumb is to pull together three colors or three elements. In a layout items look better in odd numbers. Notice that the pie has seven flowers on one side and three on the other.

Recipe for double layer 10 inch pie crust:

{I make the 10 inch so there is extra dough for the lattice work}

1 cup Crisco Shortening

2  2/3 cups of sifted all purpose flour {not self-rising}

1 teaspoon salt

7-8 tablespoons cold water.

Gently mix together and gather into a ball. Wrap in plastic and chill in fridge one hour.

Roll 1/3 of pastry to fit bottom of pie pan, insert in pie pan and add pie filling.

How to Make a Beautiful Pie

Recipe for Raspberry Rhubarb Pie Filling:

3 cups fresh or frozen rhubarb  {peeled, washed & cut into diced pieces}

1 heaping cup of fresh or frozen red raspberries  {for a total of 4 heaping cups of combined fruit}

Set fruit aside.

1 egg beaten

2 tablespoons of Tapioca instant pudding mix

1  2/2 cups of pure cane sugar

Gently mix together well. Slowly add mixture in with fruit and gently stir until blended together.

Pour in unbaked pie crust & put top lattice work on pie.
